
Okay, so these Banana Fudge Cupcakes came out so delicious. They resulted from God taking what I thought was a failure and showing me something better. Here's the story...
The fail...
I set out to do cupcakes based on Bananas Foster, which is one of my dad's favorite desserts. I'd never had it, but I thought it would be great as one of my limited-edition flavors. I used my Banana Cake recipe for the cupcakes, and I wanted to incorporate the Bananas Foster as a filling or in the frosting somehow.
Now, if you've ever had Bananas Foster, you know that one of the major components of it is rum. It's used in the flambé portion of the dish where the alcohol gets burned off and you're left with the rum flavor. Well, I'm not a fan of alcohol, so I found a recipe that used rum extract instead of actual rum (YAY!). I also had some dark brown sugar that I wanted to try with it - this was a mistake.
I thought the dark brown sugar would give it a richer taste...not so my friends. What I got was a chunky, oily, blackened mess. I tasted it several times. I guess I was attempting to trick my brain into thinking it was good because I hate wasting food (butter is crazy expensive nowadays), but I had to go ahead and scrap it.
The GOD-incidence
Trying to figure out what else to do, I realized that there happened to be some leftover Chocolate Buttercream and Chocolate Fudge from some cupcakes I'd just made for someone. Then it hit me - or rather the Spirit brought back to my remembrance - that the last time I made Banana Cake, I frosted it with Chocolate Ganache and it was amazing. I had my "ram in the bush". I mixed some of the fudge into the buttercream, piped it onto the cupcakes, put on the banana coins, drizzled fudge on top, and did the taste test...SUCCESS 😋 And that's how these delicious Banana Fudge Cupcakes came to be!!!
